Peanutbutter Chicken with Veggies
I found this recipe on the internet, and it is sooo good!
I’ve had this for dinner the last two days, and I’m going to have the rest tonight 😀
Recipe:
500 gram chicken
1 can coconut milk
3 tsp red curry paste
250 ml. low fat cream
Juice from 1 lime
3 tsbp soy sauce
4 tsbp peanutbutter
salt/peber to taste
Heat a bit oil in a pot and add the curry paste – let it fry for 2-3 min.
Add the rest of the ingredients (not chicken) and whisk it together – let the sauce thicken under medium heat.
Cut the chicken into small pieces and fry them in a pan.
Add the chicken into the sauce when fried.
For the veggies I used:
Carrots
Zucchini
Kale (white)
Reb Bell Peber
Cut into preferred size and fry quickly (2-3 min.) in a very hot pan.
I topped with some chopped almonds and shredded coconut.
Also taste good with some of my Apple Combot beside (recipe under breakfast)
