Cauliflower wrap
Dinner last night was this delicious cauliflower wrap with guacamole, red bell peber, carrot, cucumber and my chili con carne.
This is a great alternative to the normal wholewheat wraps/tortillas, if you want it more low carb. The taste isn’t the same of course, but I think this is quite good too!
Recipe (1 wrap):
Blend approximately ½ a small cauliflowerhead
Mix with 1 egg and spieces of choice (I used sea salt, peber and paprika)
Spread the “dough” on a baking sheet and bake at 180 degress for about 15 min.
Be careful when taking the wrap of the baking sheet (it easily break)
Recipe Guacamole:
1 small avocado
1 tbsp skyr/quark/greek yoghurt
Juice from ½ a lime
2 gloves garlic
salt/peber
½ red onion cut into small tubes
½ tomato cut into small tubes
Mash the avocado with a fork and mix all the other ingredients into it.
Tomatoes at the last, so they don’t get too mashed.
You can add whatever you like as filling, only your imagination sets the limits 😉
